10th August: 10am -12pm:  Menu design, layout, aesthetics, menu engineering and pricing 

10th August 1pm - 3pm: Financial analysis, food costings and selling prices. 

11th August 10am -12pm: Product analysis, concept development, plating and sensory perception

11th August 1pm - 3pm Sustainability , food product development and conclusion

Specifically designed for those working in the hospitality industry, the course develops your core knowledge and understanding of the menu design and development process. Within this, you will identify opportunities to make financial savings and consider how to make the most of the resources available to you.

During these particularly challenging times, having the right menu is key to improving the likelihood of repeat custom for your business. With increasingly knowledgeable consumers, ensuring guests expectations are met requires frequent review, evaluation and development of the menu items offered. Many chefs will develop innovative signature dishes to help make themselves and their business distinctive.

In this short course you will develop an understanding of the complex factors to be taken into consideration when designing new menus, including new product development, anchor points, effective costing and sustainability. You will then apply your learning in the creation of a menu for your own workplace.  You will also learn how to critically evaluate the success of the menu.
