Experience in Industry
I have previously worked in private country clubs, Michelin starred properties and country house hotels in management positions in the UK, Italy and USA.
Current Activities / Links with Industry
We work closely with industry partners in order to keep up to date with industry trends and to create industry openings for our students and graduates. Our industry partners include Hilton Hotels UK, Amathus Hotels, Carnegie Club at Skibo Castle and Holbeck Ghyll.

I am the programme leader for the undergraduate Hospitality and Professional Culinary Arts programmes.
Teaching responsibilities
On campus, I deliver modules on the programmes ranging from Food and Beverage Operations, Food and Beverage Management and Anthropology of Food. I also deliver on practical and operational modules where we strive to develop our students to industry level professionals. This is supported by the comments, feedback and graduate/career enhancing opportunities made available to our students by the industry.
I also supervise Independent Studies
Research interests
I have a keen interest in the anthropology of food with particular emphasis on the psychology and causal patterns of consumption habits and rituals. I am submitting papers to research conferences and is anticipating delivering at upcoming conferences.
