This summer, a Buxton student of Culinary Arts is working in her dream job in the kitchens of the famous Carnegie Club at Skibo Castle, and has already been given the responsibility of carrying the haggis into the banquet hall.
Jessica Huntley, 19, secured a summer work experience placement at The Carnegie Cub through tutors on the Foundation Degree in Professional Culinary Arts at the University of Derby Buxton, where she has just completed her first year. The chefs at Skibo have been so impressed by the skills Jessica has shown over the summer that they invited her to stay on as a commis chef until she returns to Buxton for the second year of her foundation degree next month (September).
Jessica will continue working with chefs from around the world preparing menus based on local produce from the Scottish highlands. She said: "If someone had told me a year ago that I would be working at the world renowned Carnegie Club at Skibo Castle, I would never have believed them.
"The summer placement was an incredible experience, and I am delighted that the Carnegie Club decided to keep me on for longer.
"I've had lots of opportunities to test and develop my culinary skills and confidence in a professional kitchen," she added.
"We have a Scottish dinner every Saturday night with traditional bagpipes. The haggis is carried into the dining room by one of the chefs and announced by the host. I was asked to carry the haggis into one of these banquets, which was great.
"I've also been given the chance to help the chefs on recipe cards and menus, where I've developed my skills further."
