Student Tastes Success With Beer Based Recipe

A talented Professional Culinary Arts student has demonstrated his creativity in the kitchen as one of his original recipes has been chosen to be published in a new cookery book which will be launched at the Ludlow Food Festival on September 8.
Malcolm Lomax, 52, who is in the second year of a foundation degree in Professional Culinary Arts at the University of Derby Buxton, took up Hobsons Brewery's 'Funkie Food and Ale Challenge', submitting his recipe 'Old Henry's Orzotto. The dish, which combines Old Henry's rich auburn ale with pearl barley, mushrooms and spinach, was one of just 20 recipes chosen by panel of judges to be published in the Hobsons Brewery Cook Book.
Malcolm said: "I was so delighted to hear that my recipe was selected to go into the book. I really like the dish I created, and the thought that lots of other people can now make it and enjoy it too makes me feel very happy and proud.
"It's the first time my work has been published, and I see it as the first step to writing a cookery book of my own."
Malcolm follows in the footsteps of his University lecturer, Robert Stordy, who was crowned University Chef of the Year 2012, National British Turkey Chef of the Year 2010/11 and has won many national recipe competitions including the Galbani Mozzarella recipe competition, Bramley Apple Diamond Dishes 2012 (Central Region) and the Bernard Matthews Chef Inspirations Summer Recipe competition.
Robert added: "We're all very proud of Malcolm and excited to see his first recipe in print.
"I always encourage students to test and develop their skills using new ingredients and techniques, and competitions like this one are a great way to do this. We all look forward to trying Malcolm's risotto recipe for ourselves, it sounds delicious."
Kate Pearce from Hobsons Brewery commented: "Malcom's recipe was exactly what we were looking for. It is a great vegetarian dish with a twist. Malcolm chose Hobsons Old Henry beer to add some depth of flavour to his dish and it really worked.
