Would-be Jamie Olivers and Delia Smiths can learn the craft of fine British food on the UK's first Diploma in Artisan Food, run by a celebrated Nottinghamshire cookery school and developed with the University of Derby Buxton.

The School of Artisan Food, based in the heart of Sherwood Forest on the Welbeck Estate in North Nottinghamshire, has been running short courses in artisan food production such as baking, brewing, butchery, dairy and preserving since 2009.

Following a fruitful link with staff at the University of Derby Buxton, experienced in providing world class education in culinary arts, the Nottinghamshire School has developed the UK's first and only Diploma in Artisan Food, which it will be running from this September.

Gareth Kennedy, Director of the School of Artisan Food, said: "The re-emergence of people's interest in where good food comes from, how to make it, and how it contributes to our health and wellbeing led us to set up the school and provide our short courses in baking, brewing, butchery, dairy and preserving.

However, the popularity of these courses made us realise that there was a strong desire from people who wanted to learn about all aspects of artisan food production and to achieve a recognised qualification.

"We approached the University because of its excellent reputation in providing world class education in the culinary arts. We've worked with them to develop a learning experience that will provide our students with everything they need to fulfil their personal and professional goals in artisan food."

In addition to practical training, students on the one year Diploma in Artisan Food will complete modules in food history and anthropology, in the social, political and environmental context of today's food landscape, and in business and management.

The University worked with the School of Artisan Food through a Knowledge Transfer Partnership, where universities work with businesses to devise a programme of work to address strategic issues.

Sarah Rawlinson, Assistant Dean at the University of Derby Buxton, said: "We were delighted to work with the School and to help them create what will be an excellent practical and academic experience for their students.

"We're sure that this Diploma will contribute to the resurgence of artisan food in the East Midlands, and beyond, as students go out and set up business of their own."
